Red Yeast Rice is a red color obtained through fermentation of grains with monascus purpureus.
Characteristic
RRed or dark red powder , solution in ethanol and diethyl ether, dissolved in water and glycerinum.
Coloring properties are outstanding. In particular, affinity for protein is excellent.
Rather stable in heat but unstable in direct sunlight.
A food color which is stable for such metal ions as Ca++, MG++, Fe++, and Cu++.
Application
A food additive used for meet food, such as sausage ,dairy product, alcoholic drinks, pastry.It also used for medical and cosmetic dyeing.
